Substituting honey for olive oil and putting in about a 1/3 cup of sunflower seeds and then sprinkling cinnamon sugar on top is awesome, too (if youre feeling adventurous; it tastes like a not-so-sweet cookie). I didnt have rosemary, so I used some dry tuscan herbs, added some thyme and infused a touch of garlic into oil. Roll it out part of the way, let it relax more.
